Our Cheeses

Quicke's Cheddar

A full flavoured, cloth bound, fresh milk Cheddar matured for a longer length of time to achieve a greater depth of flavour.

West Country Brie

West Country Brie is a fabulous example of a British brie. It is milder than its French counterparts but still has plenty of flavour. The cheese itself starts out firm with a soft tang. Then, as it ripens, it becomes creamier and glossier, with a greater depth of flavour and a softer texture.

Ashlynn Goats cheese

classic style goats cheese, that is fabulously buttery, with a touch of lemony sharpness that pierces the richness and opens up savoury depths and a tingle of spice.

Wrekin Blue

Wrekin Blue encompasses the flattering cheese inside. Mottled with blue streaks, this smoky blue has a mineral-like full flavour. Also, we often find that even those who don’t usually go for blue cheese love the Wrekin Blue!

Cheddleton Oak smoked Cheddar

Traditionally made to an original Staffordshire recipe, this semi-hard cheese has a creamy, crumbly texture and distinctive tang which develops as it matures. Once it has aged for a few months it is sent away to an award winning smokehouse, where it is gently smoked over a unique blend of oak and beech chippings.
