Manager

Salary package £35,000 - £40,000 plus company benefits

We are looking for an experienced manager at the Refectory; a warm and charismatic host who can take up the reins and make this characterful pub their own.

Running a Brunning and Price pub is a multi-facetted career: we are looking for outgoing and fun individuals with a real passion and sound knowledge of quality food, wines, cask ales and spirits. The role is very hands-on and extremely varied encompassing people management, food and drink, customer service, pub maintenance and day to day financial administration. 

Naturally you’ll need to have good business acumen, enjoy looking after others and lead a happy crew. You’ll enjoy a great deal of autonomy in running a substantial business with an eye for the detail: you’ll develop menus with your chef team, select your own wines and beers, find many of your own suppliers and negotiate prices. It sounds like a tall order, but in truth there’s a great deal of support available from the company when the need arises.  

As manager you will be decently rewarded for your efforts with a direct cut of the profits each month. Salary package from £35,000 - £40,000  

The Refectory at Godalming was originally a cattle barn belonging to Milford House.  It is extraordinary what you can make of a cattle barn: open fires and ancient wooden beams create a homely, cosy feel, whilst outside the extensive grounds and terrace garden are great for enjoying those rare days of sun.  All of our pubs are featured in the Good Pub Guide and for us it’s all about serving fresh, simple, high quality traditional dishes extremely well.

Our menu has a spine of freshly prepared, classic British dishes, complemented by more exotic influences from other parts of the world: in other words, modern British cookery.  Our passion lies in finding quality ingredients and preparing, cooking and presenting them in a modern but unpretentious way. 

You’ll find a great range of cask ales, extensive wine lists, back shelves crammed with Malts and fresh, seasonal menus offering classic British dishes complemented by more exotic dishes from other parts of the world – in other words, modern British dining.

Full-time Bar/Waiting Staff

Chef de Partie

Salary £19,000 - £24,000 plus paid overtime, tips and company benefits. 

The Refectory in Milford near Godalming is looking for an experienced Chef de Partie to help set the highest standards of food quality and consistency. This is a busy working environment, and as well as having high standards and demonstrating good attention to detail, you’ll help the crew set the bar high in terms of cooking delicious dishes, maintaining effective kitchen controls and adhering to excellent standards of health and hygiene.

Our Chefs de Partie have the opportunity to gain experience working across all areas of the kitchen and will generally be given responsibility to look after a particular section with the help of other chefs.

On a daily basis you’ll be supporting the Sous Chefs and Head Chef in a range of duties including fresh food preparation and cooking as well as undertaking kitchen management duties including ordering, stock control and ensuring food safety and cleaning standards are met. We encourage all our chefs to embrace our food culture and take part in menu development changes so you’ll have the chance to submit your own ideas for new dishes on the menu.

This is a key role in the kitchen and we’re looking for people with good cooking skills and experience of working in a busy kitchen in a fresh food environment. Creating a happy working atmosphere is vital to the successful running of the kitchens and comes high on our agenda and so your contribution to creating a friendly and supportive working environment is crucial.

Full time / Part time Kitchen Porter

Hourly rate plus tips and company benefits

We are looking for a Full Time / Part Time Kitchen Porter to work alongside our busy team of chefs during our particularly busy times – evenings, weekends and lunchtimes.

Duties will be varied and after initial training will include helping to keep the kitchen clean, operating the dishwasher, hand dish washing and some basic food preparation.

Previous experience is not required although enthusiasm and a genuine interest in working in a busy kitchen with high standards of food hygiene is essential.
