Katie Dallyn
Manager
Katie helped run the Black Horse in Byworth, but after 3 years decided that there was still more to be learnt. She started at Gomshall Mill and the Refectory quickly followed. Katie came to the company with a degree in Hospitality, which has proved particularly useful in her social life.
She is a farmer’s daughter, and coming from a big farming family she is all about everything local. Her favorite tipple is cider and the locals are learning if you offer her a drink, you’d better make it a pint.
Lucy Budgen
Assistant Manager
Lucy is a real all rounder, she is as adept in the cellar as she is on the bar, she cashes up, locks up and line cleans, then spends all day looking for more jobs to do. Lucy is famed for her home baking abilities and rarely arrives at work without a tempting selection of calorific delights.
Andrea Srankova
Bar/Waiting Staff
Ada (pronounced to rhyme with Badger) is an absolute pub natural. She takes a real pride in her job, is a fantastic host and has a wonderful knack of making everyone around her smile. Her dad owns vineyards in Slovakia, though she is more of a lager fiend herself.

Having worked his way through most of the countries Michelin starred celebrity hang outs, Richard finally realised that pub grub ruled and decided to jump on board at The Refectory. Canadian born, with an Italian wife, Richard's favourite dish is a full English breakfast washed down with a glass of French bubbly.
Iain Marrow
Senior Sous Chef
Iain is from Northern Ireland, he has 5 children. They have all just made the big move over and are very excited about being here. He has worked in and around Bangor for the last 15 years.
Lubo Pristovsek
Sous Chef
Lubo has been at The Refectory since 2005, when he was young, fresh faced and as keen as mustard. He's still as keen as mustard, though we can't comment on the rest. A bit of a sportsman by nature, Lubo enjoys hacky sack (playing keepy uppy with a bean bag) and ice hockey (hitting toothless Canadians with a wooden stick).
Oliver Llewellyn-Price
Kitchen Porter
Ollie is our latest and youngest kitchen recruit. He is very hard working and dreams of becoming a chef one day soon, and here at the Refectory he has a Canadian, Irishman and a Slovakian to help him on his way! Although he is small he is very loud, and always makes sure he gets heard: no doubt he will go far.
