The Red Lion is a traditional village pub in the beautiful unspoilt village of Longdon Green, between Lichfield and Rugeley on the edge of Cannock Chase.
Our purpose-built kitchen to the rear of the building is equipped to the highest standard and our chef team develop seasonal menus with a spine of freshly prepared, classic British dishes, complemented by more exotic influences from other parts of the world – in other words, modern British cookery.
We are looking for an experienced Deputy Manager to join the management crew sooner rather than later. As a Deputy Manager you are a key member of the pub management team and will be expected to support the manager as the ‘right hand’ person in all aspects of sharing responsibility for the day to day running of the pub. The role is very hands-on and extremely varied encompassing people management, food and drink, customer service, pub maintenance and day to day financial administration. You will also assume responsibility for the pub when the manager is not on the premises with the help of the rest of the management team.

We are looking for experienced Sous Chefs with excellent cooking skills, experience in helping to set and achieve GP percentages and the ability to manage high volumes with the right standards of quality and consistency. Together with the head chef you will help write the menus, assist in sourcing ingredients from the best suppliers and set and maintain the highest standards of food quality and consistency. You'll also need to efficiently run service in the head chef's absence and so your kitchen management and organisational skills will be of paramount importance. This is a vital role in the pub and is an excellent stepping stone on the road to managing your own kitchen.
We are looking for an experienced Senior Chef de Partie / Chef de Partie at the Red Lion.
Our Chefs de Partie have the opportunity to gain experience working across all areas of the kitchen and will generally be given responsibility to look after a particular section with the help of other chefs
On a daily basis you’ll be supporting the Sous Chefs and Head Chef in a range of duties including fresh food preparation and cooking as well as undertaking kitchen management duties including ordering, stock control and ensuring food safety and cleaning standards are met.
