Jules came to us having studied hospitality at Leeds uni, where she got a first in drinking wine, followed by a stint in a Chinese restaurant and seven years in a busy Tunbridge Wells bar. She’s a laid back character whose major concerns are reading, pretending to go to the gym and cooking amazing meals (well, maybe more experimental than actual amazing), while her abiding hobby is planning her next holiday. Jules is our guarantee to keep things chilled, especially the dry white wine.
Nicholas Clark
Deputy Manager
The irony of a bald, convertible driving person called Nick(y) Clark is not lost on any of us. Nick is a hard working guy who was previously with M&B before making the jump to B&P and overseeing the Two Brewers in Chigwell. A former Essex county swimmer, he could be a doppelganger for a certain Duncan Goodhew. Nick's natural charm and charisma make him a natural behind the bar….come to think of it, he’s a natural in front of the bar too……
Graham Lees
Bar Supervisor
Graham has been a stalwart at the Old Windmill for a number of years and is well known to all the customers. He's naturally enthusiastic, particularly if your favourite subject is cars and turbos. A scout leader at Wickford, he enjoys training and passing on knowledge. In his spare time he likes to drive his pride and joy serenely around the Essex countryside.
Angela Shearer
Bar/Waiting Staff
Angela has a degree in Tourism Management and Hospitality so she has a good grounding in the industry. When she’s not at the Old Windmill she helps to host functions at Hylands House at Chelmsford, ensuring people’s big day goes smoothly…...so she must be able to cope with stress, big time. An ardent Chelsea fan, she’s not been happy since José Mourinho left the club.

Marcus Garrey
Head Chef
Marcus has been a chef for 14 years, and has worked in the kitchens at both Langhams and Harrods before settling down at the Old Windmill. Born in Glasgow, he is a Rangers supporter, as well as being a fan of the Old Firm Derby. His favourite holiday destination is Mexico, and he has two young daughters.
Andrew Smith
Chef
Andy was destined to be a chef from the early years, when he had a part time job working in a bakery between school lessons, and has been cheffing in the kitchens since 2007. His early dreams of becoming a footballer were dashed when his trial for West Ham ended with a broken foot: tragic for him, but lucky for us. Andy brings calm and serenity to a busy and hectic kitchen.
Daniel Crysell
Chef
Daniel has been cooking professionally for about 13 years and worked for his last employer for over 12 years (which is true commitment in the fast moving world of chefdom), so hopefully we can hang on to Daniel for a number of years also. He's a keen family man with two young children, and in his spare time enjoys a good game of squash and watching Tottenham try to become a major football club.
Michael Metcalfe
Second Chef
Since leaving school, Mike has been a busy lad, having worked as a window fitter, double glazier, and as a grounds man. Mike has now settled down at the Old Windmill, but on his days off you’ll find him down at the gym boxing, or alternatively frequenting the local pubs, clubs, take aways and casinos of salubrious Southend.
Sinlay Chong
Second Chef
Mark is a fitness fanatic, and his natural abundance of energy certainly helps fuel the cookers in the kitchen. His favourite holiday destination is the Alps, and he has a passion for skiing and road cycling. By night, he can be found in the halls of Southend Casino.
Lee Proud
Junior Sous Chef
Lee started working in kitchens at the age of 14, and his first job on leaving catering college was in the Houses of Parliament. Unfortunately he's a big Liverpool fan (not sure how that's going to work out). Lee is a local Chelmsford lad born and bred, and spent four years in the kitchens at the town's County Hotel. On his days off he can be found topping up his tan on the golf course....

Lovely Jo is our fantastic cleaner: she previously worked in the heady world of international banking for some of the world’s top firms. Now she spends time holidaying in the south of France and is also a keen gardener. Any free time she has left is spent fussing over her three daughters, dog, cat and parrot.
