Gregory Williams
Manager
Greg came to us after several years at the Hard Rock Cafe, so he knows a thing or two about being busy. He has an interesting history (people with interesting histories are always value behind a bar), which includes a partnership in an English pub in Sweden (so don’t complain to him about the price of a pint), and a stint of travelling in Australia. Greg is a keen sportsman, enjoying both football and rugby, and he and his more fragrant other half, Pia, have a son Charlie.
Christopher Ridsdale
Deputy Manager
Chris joined B & P in the summer of 2005 with a view to the opening of the Hand, which is close to his house. Having got that under his belt, he came to the Dysart in the summer of '09. Chris works like a Trojan, and his favourite fish is Halibut.
Dorothy Wainwright
Assistant Manager
Dot is a local Bunbury character who has stamped her mark on the pub - she originally arrived as a part-time kitchen assistant, but her natural hosting skills and easy manner have made her part of the fixtures and fittings of the pub. One of Dot's achievements was to beat Greg at darts by two legs to one, so now we call her Dart. Greg says it was because it was New Years Day and he had self-induced influenza, but Dart's fame is established.
Claire Jordan
Bar/Waiting Staff
Claire has joined the company from the airline industry, where she was a shining star in the cabins. When younger she spent time in France, and has grown up in pubs, so has oodles of experience. She is a real find, and her cheerful, lively nature will brighten many a bar.
Bethany Donkin
Bar/Waiting Staff
Bethany hails from Tee-side, and narrowly won the pub chatting competition putting Jen and Dot into a tie for second. She has a weak spot for pudding wines and cheese, and her favourite foods are lobster and fillet steak, so she's no cheap date. She has on occasion been caught fighting Jack the dog with a hoover on a Sunday morning, but thinks we don't know.
Christopher Parker
Bar/Waiting Staff
After a spell at Bentley cars, Chris worked for Macdonalds Hotels 'though soon realised it wasn't for him and took up IT. When he joined us he decided that catering was ace after all and has not looked back. He likes his ales and wines, and his favourite food is anything with the word 'beef' in it. Chris lives in Whitchurch but does not like pickled eggs.

Head Chef
Jez has been with B & P now for many years - he started as a junior chef de partie at Glasfryn in 1999 and has worked his way to Head Chef, having previously headed up the kitchens at Harkers. This is his second stint at the Dysart, having been a sous chef here in a different era, but now he holds the reins, the world is his oyster. Jez is one of those chefs who maintains an even keel when the going gets tough, so should do well coping with Greg.
Andrew Fox
Sous Chef
Known as ' Foxy' by all and sundry, he is famous for exhibiting his builder's bum when going for low pans in the oven, so is normally asked to do a lot of grill work. Foxy has been with the company since 1996, and had a spell as a chef de partie in the Grosvenor Arms, before hitting the road in 1999. He has a silken touch with the company cars, once filling a diesel with ordinary petrol and driving it around until it died, which cost over £2,000 to resuscitate. He can't do that now he's got the company bicycle.
Matthew Cowell
Senior Chef de Partie
Matt has been at the Dysart since 1999, and completed his training here in 2002. He is our current Chef de Partie, and is one very laid back dude.
Christopher Murton
Chef de Partie
Chris is a local lad, born and bred in Bunbury. After washing up and getting involved in the food prep at the Nag’s Head in Haughton, Chris decided he enjoyed the kitchen and has taken the plunge to start his training with B & P at the Dysart. Bon voyage.
Jake Watson
Trainee Chef
Jake Joined us as KP, but quickly showed he had a future in cheffing and has continued to blow our socks off with his attitude and commitment. He hails from Liverpool and supports Aston Villa, changes his hairstyle every day, and likes women, food and slow cars. One of the weapons Jake has in his armoury is that he's over 6ft tall, so he is the kitchen's resident 'could-you-fetch-that-off-the-top-shelf-please' person.
