Smokeries
Brown and Forrest

A small family-run smokery started 22 years ago in Somerset, Brown and Forrest specialise in "the finest" smoked eel and salmon as well as a whole range of delicious marinaded and smoked food that includes smoked chicken, duck, lamb and trout, as well as smoked garlic, smoked cod’s roe (for taramasalata), smoked cheese, ostrich and venison. An easy-to-use, smokin' site.(sorry about that)
Hebridean Smokehouse

This company’s peat-smoked salmon, trout and hot-smoked salmon from the Outer Hebrides comes with ringing endorsements from Prue Leith (…“The best in the world") and Albert Roux (”A beautiful product…in a world of its own.”) amongst others. A simple and elegant website which is very easy to use.
Macdonald's Smoked Produce

Former trawler fisherman Simon Macdonald started up the company in March 1987 in the tiny fishing village of Glenuig in the West Highlands of Scotland. They supply the QE2, Harrods and Gleneagles, as well as several royal households and embassies, with the likes of smoked haggis, smoked game, smoked cheeses, smoked fish of every hue, and food from the wilder side - aligator, kangaroo and ostrich. Ummera

An Irish smokery which spesialises in smoking wild Atlantic salmon gently in oak. Proprietor Anthony Creswell has recently encompassed carefully-sourced organically farmed salmon, recognising that wild salmon stocks are coming under increasing pressure.
