Ally Craig
Manager
Ally has spent most of his life living and growing up around Mold, where he first joined us at Glasfryn. He studied up in Scotland (his ancestral birthplace) at St. Andrews University, where he managed to get an honours degree in Applied Chemistry and Bagpipe as well as a decent score on the ‘Old Course’. He is a ski fanatic and spent some time as a chalet host in Austria as well as working as a snow board instructor. His other interests include scuba diving, fell running and church going.
Daniel Redfern
Deputy Manager
Dan is affectionately known as Dan the Fish, because he used to be the MD of a fish company. He is a foodie’s foodie and is passionate about cooking and recipe writing, and has an enviable wine collection which he draws on enthusiastically. In a previous incarnation. Dan ran a delicatessen and catering business in Warrington, and on top of everything else, he is damn good company and good to share a pint with.
Louise Haynes
Assistant Manager
From a background that did not involve the service side of a bar, Louise has flung herself head first into the pub industry, with success. An avid fan of Jim Beam (with ginger ale and lime, for goodness' sake) Louise specializes in shopping and talking, and is at an advanced level of expertise. She hasn't made up her mind yet if she's a good decision maker.
Thomas Emson
Bar/Cellar person
Having been born with a silver tankard in his mouth, Tom has a serious palate for beer and naturally he became our cellar man. When occasionally a silence can be heard in the pub, rest assured the peace will be swiftly broken by the sound of Tom man-handling barrels in the cellar or shouting crudities at the fire, which he is yet to light after two years of trying. He’s always got a smile on his face, is loved by staff and regulars alike and is not the first at the Jug to be seen wearing a pink shirt.
Kelley Woodall
Bar/Waiting Staff
Kelly juggles life between bringing up her two young children, doing a spot of cleaning, and working behind the bar, so has her hands full. She is a ray of light in the pub and her enthusiasm is infectious, hence her move front-of-house, but we hope she doesn't hang up her marigolds completely.
Tracey Seedhouse
Bar/Waiting Staff
Racey Tracey hails from tropical Coventry. She spent four years travelling round the world which is quite a long time – so presumably she walked, before landing in Horsham with a thud. She is lost without her glasses. Breaking them once during a lunch service, we taped them back together and she looked just like Jack Duckworth’s good looking niece.

Steven Whitnall
Head Chef
Having scored the winning goal in the FA cup final for Brighton and Hove Albion, he decided to apply his magic touch to the renaissance of modern British cuisine in down town Horsham. When he is not doing this he is often seen down by duck pond drinking out of brown bag.
Adam Sullens
Sous Chef
With a colourful past working as a florist, Adam came to us from a local hotel, but before that he was on the London cheffy circuit for a couple of years. When he's not trying to find his beloved car, which he keeps mislaying, Adam enjoys rock climbing, swimming and poker.
Philippe Humbert
Chef de Partie
Like Adam, Phil has also done a ski season - indeed, he has his own apartment in Les Arcs, so we're organising a staff do to go out there at some point this year. He's just finished a course at Leith's cooking school, and is just starting to teach our Sous chef how to peel an egg.
Tristram Adams
Chef de Partie
Cockney boy Triss, as he's fondly known, has become a valuable member of the Jug kitchen team. He has an appetite for all things edible, so tends to eat as much grub as he serves, all be it to the most exacting of standards. He's also a typical music geek and enjoys nothing more than eating away listening to The Rolling Stones.
Lee Tyrer
Commis Chef
Hard as it may be to imagine from this photo, Lee used to be a model, although not for Calvin Klein. His claim to fame is that he was on the front of a baked bean tin, until sales fell through the roof, when he got a job with us cooking his own beans.
Stevo
Trainee Chef
Stevo, as he’s known by all, is fond of the odd Kronenbourg or seven and, with his legendary ability to impersonate the management team, is an endeared member of our kitchen team. He’s also an excellent young chef, skilled and dedicated beyond his years, who’s taken to the kitchen like Frank Sinatra to a microphone. Every Sunday night without fail, Stevo is to be found in Piries bar singing Karaoke songs by his future wife, the great Lady Gaga.
