Front of house
Ally Craig
Manager
Ally has spent most of his life living and growing up around Mold, where he first joined us at Glasfryn. He studied up in Scotland (his ancestral birthplace) at St. Andrews University, where he managed to get an honours degree in Applied Chemistry and Bagpipe as well as a decent score on the ‘Old Course’. He is a ski fanatic and spent some time as a chalet host in Austria as well as working as a snow board instructor. His other interests include scuba diving, fell running and church going.
Oliver Leaney
Deputy Manager
Oliver, named after Oliver Reed (a friend of his fathers), was born and raised in pubs. His middle name, Lucien, was named after a French bloke who produced Champagne Cognac, and was also a friend of his fathers - are you spotting a theme here? Predictably, he loves French wines, British Ales and Ciders from just about anywhere, and in the sports department, he is keen on rugby, skiing and an engine with two wheels.
Louise Haynes
Assistant Manager
From a background that did not involve the service side of a bar, Louise has flung herself head first into the pub industry, with success. An avid fan of Jim Beam (with ginger ale and lime, for goodness' sake) Louise specializes in shopping and talking, and is at an advanced level of expertise. She hasn't made up her mind yet if she's a good decision maker.
Lisa Brown
Assistant Manager
Lisa joined the Black Jug team part time in 2008 and loved the way of life soooo much she jacked in the 9 - 5 rat race for a life as a publican (not a Pelican - she has a serious dislike of birds)... She is trying to learn as much as possible about the trade and has the 'tidiest cellar in the South'. Lisa has a passion for art, food, friends, gin and a growing knowledge of wine. Recently she has taken up jogging and is giving it her all - if not gliding around the Black Jug she can be seen doing her best gazelle impression round Horsham Park.
Victoria Holden
Bar/Waiting Staff
Vicky is a foodie she loves anything that has potatoes in it in fact she loves potatoes, and because of all the carbs she eats she loves to run cross country. Vicky also has a passion for art and is a bit of a budding artist herself. She enjoys a bottle of rose now and again and loves sunny holidays. Vicky is a key member of the Black Jug and a real team player.
Kitchen
Steven Whitnall
Head Chef
Having scored the winning goal in the FA cup final for Brighton and Hove Albion, he decided to apply his magic touch to the renaissance of modern British cuisine in down town Horsham. When he is not doing this he is often seen down by duck pond drinking out of brown bag.
Owen Currie
Sous Chef
Owen began his career at The Druid Inn before spending three years training at Carden Park Hotel. Having worked stints at The Living Room in Chester, he thought a spell on the cruise ships in sunny Scotland would be a treat, not realising that sea-sickness was part of the deal.
Philippe Humbert
Chef de Partie
Like Adam, Phil has also done a ski season - indeed, he has his own apartment in Les Arcs, so we're organising a staff do to go out there at some point this year. He's just finished a course at Leith's cooking school, and is just starting to teach our Sous chef how to peel an egg.
Tristram Adams
Chef de Partie
Cockney boy Triss, as he's fondly known, has become a valuable member of the Jug kitchen team. He has an appetite for all things edible, so tends to eat as much grub as he serves, all be it to the most exacting of standards. He's also a typical music geek and enjoys nothing more than eating away listening to The Rolling Stones.
David Slaven
Commis Chef
David has worked with us since he was 16 and started as a kitchen porter, but is now our promising Commis Chef. Dave is Scottish but he talks broad Horsham (west side), and enjoys fishing and going out clothes shopping. He is an important part of the kitchen and is a real team player.
